Fermentation at controlled temperature, 26 - 27 ºC. Cold macerated prior to fermentation. Pigeage. Malolactic fermentation and natural fining run at concrete vats.
Grapes enter the winery by gravity. Wines racked by gravity.
Red cherry colour. Mountain wine with a powerful expression of its terroir. Mineral.
Intense floral aromas, with violets dominating in a background of cherries and strawberries.
In the palate it is very fresh and long, with a long after taste with again the floral notes of the Merlot.
Ars Nova in Latin means "New Art", very much in accordance with the philosophy behind this wine. Ars Nova is a musical movement of the 14th century developed by Philippe de Vitry to describe a new way of playing music. This new style of music was more complex, noted for its harmony and rhythm. It was to be the birth of polyphony. It has been compared to the arrival of perspective in painting which occurred in the same period
